1 kg fresh sweet red peppers (10-12 pieces)
200 gr. feta cheese
150 gr. manouri cheese or any white unsalted cheese
1/3 bunch parsley
¼ bunch basil
¼ bunch mint
2 tomatoes peeled
3 cloves of garlic
1 red onion
2-3 fresh green onions
½ cup olive oil
Sea salt & freshly ground pepper


1.Wash peppers thoroughly under cold water. Cut the upper side of the pepper and remove seeds from inside.
2.Prepare the stuffing. Chop greens and vegetables. In a bowl, using a fork, crush feta and manouri cheese until crumbled.
3.In the same bowl add the rest of ingredients and mix with a spoon until combined.
4.Using a teaspoon, fill the peppers, place the stalks back on them, so that the filling doesn’t pour out and place peppers in the baking pan. Drizzle with olive oil.
5.Bake in a preheated oven for about 45 minutes to 200o Celsius until peppers are nicely colored and soft.


  1. Alternatively, instead of manouri , you can use any white unsalted cheese. If you prefer a yellow hard cheese, it fits in nicely too.
  2. You can chop your greens and vegetables using a food processor for easiness.
  3. If you have left any filling, preserve it in the fridge. It matches perfectly with omelets.
