
| 1 kg new potatoes | |
| 1 tsp sea salt | |
| For the pesto | |
| 90 gr basil leaves | |
| 3 garlic cloves | |
| 120 gr grated spicy gruyere | |
| 1 tsp sea salt | |
| Lemon zest from 1 lemon | |
| 40 gr lemon juice | |
| 50 gr hazelnuts | |
| 60 gr pistachios | |
| 60 gr olive oil | |
| 1 tbsp pistachio butter |
| 1. | Wash potatoes thoroughly. Put potatoes in a large pan. Cover with fresh water, add salt and bring to boil. Simmer for about 20 min until completely tender. Drain and set aside. |
| 2. | For the pesto, put all the ingredients together in a food processor to form gradually a smooth paste. |
| 3. | Mix potatoes with the pesto and serve. Add extra cheese and lemon zest on top, if desired. |
