INGREDIENTS

1 kg new potatoes
1 tsp sea salt
For the pesto
90 gr basil leaves
3 garlic cloves
120 gr grated spicy gruyere
1 tsp sea salt
Lemon zest from 1 lemon
40 gr lemon juice
50 gr hazelnuts
60 gr pistachios
60 gr olive oil
1 tbsp pistachio butter

INSTRUCTIONS

1.Wash potatoes thoroughly. Put potatoes in a large pan. Cover with fresh water, add salt and bring to boil. Simmer for about 20 min until completely tender. Drain and set aside.
2.For the pesto, put all the ingredients together in a food processor to form gradually a smooth paste.
3.Mix potatoes with the pesto and serve. Add extra cheese and lemon zest on top, if desired.
