INGREDIENTS

2 kg beef or goat meat with bone
1 sweet potato
2 medium potatoes
5 carrots
2 medium zucchinis
2 medium leeks
2 red peppers (horned)
2 big onions
1 fresh onion
1 celeriac (+ celery)
150 gr orzo
Salt and pepper
Lemon to serve

INSTRUCTIONS

1.Put the meat in a deep pot and cover it with cold water. Bring to boil on a high temperature and then cook on low temperature.
2.Simmer with a whole onion for 2 ½ hours until the meat softens and comes away from the bone.
3.Wash thoroughly the greens and cut them in half.
4.Sieve broth from the meat, remove meat to a dish and leave it aside.
5.Replace broth in the pot, mix in half of the vegetables and boil in medium temperature for 15 min. Add also celeriac cut in 4.
6.Chop the rest of the vegetables and add them in the pot. Continue cooking for another 20 min. Add the seasonings.
7.Take out from the pot the uncut vegetables with some broth.
8.Cut the meat into pieces and add them in the pot.
9.Add also orzo and cook accordingly to the package directions.
10.Melt the boiled vegetables with the broth into the multi-cutter. Add them in the pot and stir.
11.Serve in a deep plate and squeeze fresh lemon juice.

Notes

  1. Alternatively, you can melt half of the raw vegetables into the multi-cutter and add them with the chopped vegetables into the pot, escaping one step. But since raw vegetables are sensitive in loosing nutritional value when being chopped or melted, I prefer the way I describe above.
  2. Add water if needed, when you take the meat out from the pot.
