INGREDIENTS

500 gr. all-purpose flour
4 eggs
250 gr. butter
5 tbsp grated coconut
200 gr. brown sugar
250 gr. plain Greek yogurt
250 gr. orange juice
2 tsp baking powder
1 tsp baking soda
½ tsp sea salt
3-4 tbsp chocolate spread
powdered sugar for dusting

INSTRUCTIONS

1.Preheat the oven to 170o Celsius.
2.In a big bowl whisk flour, coconut, baking powder, baking soda, sea salt and leave aside.
3.Beat with a hand hold or a stand mixer, butter and sugar until smooth and creamy.
4.Add eggs, one at a time, and keep mixing on lower speed.
5.Mix in yogurt and part of the flour.
6.Add in orange juice and rest of the flour.
7.Grease a big cake pan (tin), pour half of the batter into it, add chocolate spread with a spoon between and add rest of the batter.
8.Bake the cake for 50 minutes.
9.Remove cake from the oven and let it onto a cooling rack for 15-20 minutes.
10.Remove cake from the pan (tin) and let it cool completely.
11.Dust with powdered sugar, if you like.

NOTES

  1. Bring butter and eggs to room temperature.
  2. You can add the baking soda into the squeezed orange juice for extra volume in the batter.
  3. If you don’t want any chocolate spread inside, you can pass over.
  4. For a small cake, you can halve the recipe. In that case, you’ll need less time of baking (5-10 min.).
